Meet Our Chef

Chef Joaquín Vela

A native of Seville with kitchens behind him in San Sebastián, Lisbon, and Mallorca, Joaquín leads Casa Olivar with the conviction that great cooking begins with great ingredients — and ends with great company.

"Every plate is a small love letter to where I'm from. I'm not trying to reinvent the Mediterranean — I'm trying to remember it, plate by plate."

— Joaquín Vela
